Time of the Month Indulgence without the Guilt-Zucchini Nachos


Zuchini Nachos

Will power is something that must be consciously maintained. I’d like to think when I’m serious and focused I can say no to fatty foods, sweet treats, and other things that will ruin my diet. Usually the hardest times for me are during that dreaded week of my period. My will power is usually out the door as all I want to do is sleep, let my bloated belly hang out, and just be comfortable. One thing that I really struggle with is my diet during that week. My body craves fatty foods and all I want to do is EAT!! One of my favorite comfort foods to eat during that time of the month are nachos, they’re seriously like my kryptonite. I like them stacked high with toppings and smothered in gooey cheese.  As I’ve mentioned in previous post I’m on a mission to whittle my waist and get back in shape so, when that time of the month came around last month I had to make a decision, completely jump off the wagon and indulge in my favorite “time of the month comfort” or stay on track.  After fighting a serious internal battle I decided I would stay on track and I would still have my Comfort Nachos, but instead of using chips with all the carbs and salt I would use Zucchini, and thus Zucchini Nachos were born!

One of the things I’m most proud of is my garden. I think I inherited an awesome green thumb from my grandmother. To make Zucchini Nachos I decided to pick one the largest zucchinis I could find from my garden. The remainder of the ingredients I picked up from the grocery store and I promise I didn’t stop anywhere near the cookie or candy aisles.

To prep for the Zucchini Nachos start by slicing your zucchini into rounds. You want to make sure that they are a little on the thicker side since they are going to be used as your “chips”. Toss you Z “chips” in some olive oil and prep your grill.

Grill your Zucchini Chips over medium heat, about 10 minutes on each side. Now, these zucchini aren’t going to be crisp like chips, for that you’ll need an oven. I decided to have my husband use the grill because, I mean, why not??

While the Zucchini Chips are grilling prep your ground beef and black beans. Once everything is ready, prep your nachos as normal with layers and layers of goodness. Zucchini Nachos.jpg

    I don’t know that I do anything differently to relax that time of the month! I do indulge in a chocolate treat. These nachos look amazing. I don’t like zucchini, squash or eggplant, but there’s got to be a veggie I could substitute with, because this is so much healthier!

    yeah….this is why I’m fat. There’s no way zucchini ‘nachos’ are going to do it for me! lol. I pamper myself with the standards – chocolate, heating pads, and pain relievers. Massage from the hubby, too.

    I pamper myself by taking care of my nails – I am usually taking on the phone or watching TV at the time, and I take off any polish that is on them, and then I groom my cuticles, file and shape my nails, and then if I want to put on a new color I do that (base coat, 2 coats of color, top coat, and drying drops). It’s a necessary task, but also relaxing. 🙂
