In a wok add vegetable oil and brown ground pork. After 2 minutes add ginger and garlic. Cook until completely brown. Add remaining ingredients and stir frequently. Set to aside.
For the extra sauce mix all ingredients in a bowl and whisk until thoroughly mixed.
Cook the udon noodles according to package. For this recipe, I used four bundles of Udon noodles. Rinse with cool water.
Add Dan Dan sauce to the bottom of the serving dish. Top with Udon Noodles and cooked pork. Garnish with green onions. Toss at table side.
